Cold Cantaloupe Soup

This cold soup recipe is great for breakfast, lunch, dinner or as a snack or dessert!

 

Ingredients
            1 cantaloupe - peeled, seeded and cubed
            1 cup cups orange juice
            1 tablespoon fresh lime juice
            1/4 teaspoon ground cinnamon

 

Preparation Instructions

Peel, seed, and cube the cantaloupe.

Place cantaloupe and 1/2 cup orange juice in a blender or food processor.

Cover, and process until smooth.

Transfer to large bowl.

Stir in limejuice, cinnamon, and remaining orange juice.

Cover, and refrigerate for at least two hour.

Garnish with mint if desired.

 

 

 

Onion Salad

Onions provide a variety of medicinal effects. Early American settlers used wild onions to treat colds, coughs, and asthma, and to repel insects. In Chinese medicine, onions have been used to treat angina, coughs, bacterial infections, and breathing problems.  The World Health Organization (WHO) supports the use of onions for the treatment of poor appetite and to prevent atherosclerosis.

 

This salad will give you the health benefits of the onion in a tasty side dish.  Add 2 diced tomatoes for a slightly different flavor.

 

Ingredients
3 medium yellow onions, sliced
3 medium red onions, sliced
1 1/2 cups vinegar
2 teaspoons powdered Stevia
1/2 teaspoon salt
1 teaspoon pepper
*Optional – 2 diced tomatoes 

Preparation Instructions

Combine all ingredients in a bowl, mixing well.

Cover and chill for a minimum of one hour before serving.
