Almond Crusted Salmon with Fruit Glaze

This dish will get anyone's attention!

1 cup almonds, crushed

2 tablespoon sesame seeds

2 eggs whites

1 tablespoon water

1 teaspoon coconut oil

1 to 2 pounds fresh salmon Preparation:

Preheat oven to 350 degrees 

Crush the almonds and sesame seeds in a blender  (I find almond slices crush the best)

Place the almond sesame mixture in a shallow pie plate 

Whisk together the egg white and water in another shallow pie plate 

(Save the yolks for your furry friends)

Place the coconut oil in a large baking dish 

Evenly coat the bottom of the dish  Rinse the salmon in cool water 

Dip the salmon in the egg/water mixture 

Coat both sides 

Dip the salmon in the crushed almond mixture 

Coat both sides 

Place in oven proof baking dish 

Bake for 10 minutes 

Remove from oven and turn the salmon over 

Bake 10 more minutes 

 

Strawberry Puree just adds the final touch of taste to this delicious dish.  Serves six to eight

 

Brit’s Note: I prefer fresh Alaskan Salmon. Look for bright pink meat and no odor when purchasing salmon.

 

Strawberry Puree

Ingredients:

1 teaspoon whole leaf stevia powder

1 teaspoon water

2 cups pureed strawberries

1 teaspoon lemon juice

Preparation:

Over medium heat bring the ingredients to a simmer. 

Simmer for one minute, stirring well. 

Glaze the salmon with the puree

 

 

 

 

Chocolate Mousse

Healthy and tasty!  

A perfect end to a heart healthy meal.

 

Ingredients:

1 large sweet potato cooked soft and peeled

3/4 cup unsweetened cocoa

1 cup heavy whipped cream

1 1/2 tsp of vanilla extract

1 tsp stevia liquid

Preparation:

Add all ingredients and blend until smooth. Adjust cocoa, stevia and/or vanilla to suit taste. 

Add almonds or carob chips for variation.
